Ingredients
Scale
Muffin Batter
- 2 cups all-purpose flour
- 1 cup granulated sugar
- ½ cup unsalted butter, melted
- 1 tbsp baking powder
- ½ tsp salt
- 1 tsp ground cinnamon
- ½ cup whole milk
- 2 large eggs
- ½ tsp vanilla extract
Streusel Topping
- ½ cup all-purpose flour
- ½ cup packed brown sugar
- ¼ cup unsalted butter, cold
- 1 tsp ground cinnamon
Instructions
- Preheat and Prepare Pan: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease the cups to prevent sticking.
- Mix Dry Ingredients: In a large bowl, whisk together 2 cups of flour, 1 cup sugar, baking powder, salt, and 1 tsp cinnamon until well combined.
- Mix Wet Ingredients: In another bowl, whisk the melted butter, whole milk, eggs, and vanilla extract until smooth and fully incorporated.
- Combine Wet and Dry: Gently fold the wet ingredients into the dry ingredients just until combined to avoid overmixing, ensuring a tender muffin texture.
- Prepare Streusel: In a separate bowl, mix ½ cup flour, brown sugar, and 1 tsp cinnamon. Add cold butter and use your fingers or a pastry cutter to blend until coarse crumbs form, creating the streusel topping.
- Fill Muffin Cups: Spoon the batter into the muffin cups, filling them about two-thirds full to allow room for rising.
- Add Streusel: Evenly sprinkle the prepared streusel topping over each muffin batter cup for a crunchy, cinnamon-sugar finish.
- Bake Muffins: Bake in the preheated oven for 18–22 minutes or until a toothpick inserted in the center comes out clean.
- Cool and Serve: Allow muffins to cool in the pan for 5 minutes before transferring them to a wire rack. Enjoy them warm or at room temperature.
Notes
- Do not overmix the batter to keep muffins tender and moist.
- Use cold butter in the streusel to achieve a crumbly texture.
- Muffins are best enjoyed the same day but can be stored in an airtight container for up to 2 days.
- For a dairy-free version, substitute milk and butter with plant-based alternatives.
- Adding chopped nuts like walnuts to the streusel can add extra crunch and flavor.
