  • ¼ cup strong brewed coffee (cooled)

For the Coffee Soak:

  • ½ cup strong brewed coffee
  • 1 tablespoon coffee liqueur (optional)
  • 1 tablespoon sugar

For the Mascarpone Cream:

  • 8 oz mascarpone cheese (room temperature)
  • 1 cup heavy cream (cold)
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract

For Topping:

  • Unsweetened cocoa powder
  • Chocolate shavings (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and prepare cake pans.
  2. Prepare the Cake: Mix dry ingredients, cream butter and sugar, add eggs and vanilla, alternate dry ingredients and milk mixture, divide and bake batter.
  3. Make the Coffee Soak: Combine brewed coffee, liqueur, and sugar.
  4. Create Mascarpone Cream: Beat mascarpone, sugar, and vanilla, whip cream separately, fold cream into mascarpone.
  5. Assemble the Cake: Layer cake, soak with coffee mixture, spread mascarpone cream, repeat layers, dust with cocoa powder and garnish with chocolate shavings.
  6. Chill and Serve: Chill the cake for at least 2 hours before serving.

  • Enhance coffee flavor with espresso powder in the cake batter.
