Ingredients

Scale

For the Soup:

  • 2 tablespoons butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups green cabbage, shredded
  • 4 cups potatoes, peeled and diced
  • 4 cups chicken or vegetable broth

Additional Ingredients:

  • 1 cup whole milk or heavy cream
  • 4 green onions, chopped
  • Salt and pepper to taste
  • Chopped fresh parsley or crumbled cooked bacon for garnish (optional)

Instructions

  1. In a large pot, melt the butter over medium heat. Add the diced onion and cook until soft and translucent.
  2. Stir in the garlic and shredded cabbage, sauté until wilted.
  3. Add the diced potatoes and pour in the broth. Simmer until potatoes are tender.
  4. Puree the soup slightly for creaminess if desired. Stir in milk/cream and green onions. Simmer for 5 minutes.
  5. Season with salt and pepper, then ladle into bowls. Top with parsley or bacon. Serve warm.
