Description

This Cold Spaghetti Pasta Salad Recipe is a refreshing and flavorful dish perfect for summer gatherings. With a mix of pasta, fresh vegetables, and tangy dressing, it’s a popular choice for potlucks and picnics. The chilled salad is easy to prepare and can be customized with additional protein options like salami, chicken, or chickpeas.

Ingredients

Scale

Spaghetti Salad:

  • 12 oz spaghetti, cooked and cooled
  • 1 1/2 cups cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup black olives, sliced
  • 1/2 cup shredded Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 3/4 cup Italian dressing
  • Salt and pepper to taste

Instructions

  1. Cook the spaghetti: Cook the spaghetti according to package instructions until al dente. Drain, rinse under cold water, and set aside to cool completely.
  2. Prepare the salad: In a large bowl, combine the cooled spaghetti, cherry tomatoes, cucumber, red onion, black olives, Parmesan cheese, and parsley.
  3. Add dressing: Pour the Italian dressing over the salad and toss until well coated. Season with salt and pepper to taste.
  4. Chill and serve: Cover and refrigerate for at least 1 hour to allow flavors to meld. Toss again before serving and garnish with extra parsley or Parmesan if desired.
