Description

  • 1 cup yellow cornmeal
  • ½ cup all-purpose flour
  • 1 teaspoon baking powder

  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika (optional)

Wet Ingredients:

  • 1 cup finely chopped onion (about 1 medium onion)
  • ¾ cup milk
  • 1 large egg
  • 2 tablespoons chopped fresh parsley (optional)
  • vegetable oil for frying

Instructions

  1. Dry Ingredients: In a large bowl, whisk together the cornmeal, flour, baking powder, salt, pepper, garlic powder, and smoked paprika. Stir in the chopped onion and parsley if using.
  2. Wet Ingredients: In a separate bowl, whisk together the milk and egg. Pour the wet mixture into the dry ingredients and stir until just combined to form a thick batter.
  3. Cooking: Heat about 2 tablespoons of oil in a large skillet over medium heat. Scoop heaping tablespoons of the batter into the skillet, flattening slightly with the back of a spoon. Cook for 2–3 minutes per side, or until golden brown and crispy. Transfer to a paper towel-lined plate. Repeat with remaining batter, adding more oil as needed.
  4. Serve warm.
