Ingredients
Scale
Meatloaf
- 1 lb ground beef
- 1 cup breadcrumbs
- 1/2 cup onion, chopped
- 2 cloves garlic, minced
- 1/4 cup milk
- 1 egg
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 cup barbecue sauce, divided
Potato Casserole Topping
- 4 cups potatoes, peeled and sliced
- 1 cup cheese, shredded
- 1/2 cup sour cream
- 1/4 cup butter
Instructions
- Preheat the oven: Preheat your oven to 350°F (175°C) to prepare for baking the meatloaf and casserole.
- Prepare the meatloaf mixture: In a large bowl, combine ground beef, breadcrumbs, chopped onion, minced garlic, milk, egg, salt, pepper, and half of the barbecue sauce. Mix well until all ingredients are evenly incorporated.
- Shape and place the meatloaf: Form the meat mixture into a loaf shape and place it into a baking dish, ensuring it’s evenly shaped for consistent cooking.
- Add barbecue sauce topping: Spread the remaining barbecue sauce evenly on top of the shaped meatloaf to add flavor and moisture during baking.
- Prepare and spread the potato casserole: In another bowl, mix the sliced potatoes, shredded cheese, sour cream, and butter until well combined. Then carefully spread this potato mixture over the top of the meatloaf in the baking dish.
- Bake the dish: Place the baking dish in the preheated oven and bake for 1 hour, or until the meatloaf is cooked through and the potato topping is golden and bubbly.
Notes
- To check if the meatloaf is cooked, insert a meat thermometer into the center; it should read 160°F (71°C).
- For easier slicing, let the meatloaf rest for 5-10 minutes after baking.
- You can substitute barbecue sauce with your favorite variety for a different flavor profile.
- For a richer potato topping, consider adding a sprinkle of extra cheese on the very top before baking.
