- 3–4 pounds beef chuck roast
- 1 can (14 oz) whole berry cranberry sauce
- 1/2 cup beef broth
- 1/4 cup balsamic vinegar
- 1 tablespoon Worcestershire sauce
- 1 tablespoon Dijon mustard
Seasonings:
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried rosemary
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Garnish:
- Fresh thyme or parsley for garnish (optional)
Instructions
- Place the Chuck Roast: Put the chuck roast in the slow cooker.
- Mix the Sauce: In a medium bowl, combine cranberry sauce, beef broth, balsamic vinegar, Worcestershire sauce, Dijon mustard, garlic powder, onion powder, rosemary, salt, and pepper. Pour over the roast.
- Cook: Cover and cook on low for 8–9 hours or on high for 4–5 hours until the beef is tender and shreds easily.
- Shred and Coat: Remove the beef, shred or slice it, then return it to the slow cooker. Stir to coat with the sauce and let sit for 10–15 minutes to absorb flavors.
- Garnish and Serve: Garnish with fresh thyme or parsley if desired. Serve warm.
