  • 34 pounds beef chuck roast
  • 1 can (14 oz) whole berry cranberry sauce
  • 1/2 cup beef broth
  • 1/4 cup balsamic vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Dijon mustard

Seasonings:

  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Garnish:

  • Fresh thyme or parsley for garnish (optional)

Instructions

  1. Place the Chuck Roast: Put the chuck roast in the slow cooker.
  2. Mix the Sauce: In a medium bowl, combine cranberry sauce, beef broth, balsamic vinegar, Worcestershire sauce, Dijon mustard, garlic powder, onion powder, rosemary, salt, and pepper. Pour over the roast.
  3. Cook: Cover and cook on low for 8–9 hours or on high for 4–5 hours until the beef is tender and shreds easily.
