Instructions
- Preheat and Prepare: Preheat the oven to 350°F and grease a 9×5-inch loaf pan or line it with parchment paper.
- Mix Dry Ingredients: In a large mixing bowl, whisk together flour, sugar, baking powder, baking soda, salt, and cinnamon.
- Combine Wet Ingredients: In a separate bowl, whisk the egg, orange juice, vegetable oil, and orange zest until combined. Pour the wet ingredients into the dry and stir just until moistened—do not overmix.
- Add Mix-Ins: Gently fold in the cranberries and walnuts if using.
- Bake: Pour the batter into the prepared pan and smooth the top. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
- Cool and Serve: Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
- Fresh cranberries are ideal, but frozen ones can be used straight from the freezer—no need to thaw.
- Add a simple orange glaze for extra flavor: mix 1/2 cup powdered sugar with 1–2 teaspoons orange juice and drizzle over the cooled bread.
