Truffle Mixture:
- 12 ounces white chocolate chips or chopped white chocolate
- 1/4 cup heavy cream
- 1/2 teaspoon vanilla extract
- 1/3 cup dried cranberries (finely chopped)
- 1/3 cup shelled pistachios (finely chopped)
For Coating (optional):
- Extra chopped pistachios
- Extra dried cranberries
Instructions
- Prepare the Truffle Mixture: Place the white chocolate in a heatproof bowl. Heat the heavy cream in a saucepan until simmering. Pour the hot cream over the white chocolate, let sit for 1–2 minutes, then stir until smooth. Add vanilla extract, chopped cranberries, and pistachios. Refrigerate for 1–2 hours.
- Shape the Truffles: Scoop out tablespoon-sized portions of the chilled mixture and roll into balls. Optionally, coat each truffle in extra chopped pistachios and cranberries.
- Store and Serve: Keep the truffles in an airtight container in the refrigerator. Enjoy for up to 1 week!
