For the Casserole:
- 1 lb ground beef
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 small head green cabbage (about 6 cups), chopped
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1½ cups milk
- ½ cup sour cream
- 1 teaspoon Dijon mustard
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1½ cups shredded cheddar cheese, divided
- ½ teaspoon paprika (optional)
- Fresh parsley, chopped (optional for garnish)
Instructions
- Preheat oven and prepare baking dish: Preheat oven to 375°F and lightly grease a 9×13-inch baking dish.
- Cook ground beef and onion: In a skillet, cook ground beef and chopped onion until beef is browned and onion is soft. Add garlic and cook for 1 minute. Drain excess fat.
- Sauté cabbage and make sauce: In the same skillet, melt butter and sauté cabbage until soft. Sprinkle flour, stir, then slowly add milk. Cook until thickened. Stir in sour cream, mustard, salt, pepper, and 1 cup of cheddar cheese until smooth.
- Combine and bake: Add cooked beef to the skillet, mix, then transfer to the baking dish. Top with remaining cheese and paprika. Bake for 20–25 minutes until bubbly and golden.
- Rest and garnish: Let cool for 5 minutes before serving. Garnish with parsley if desired.
Notes
- For a low-carb version, skip the flour and thicken the sauce with cream cheese.
- This dish reheats well and can be made ahead and baked just before serving.
