  • 3 cloves garlic, minced
  • 2 cups fresh spinach
  • 1 cup cherry tomatoes, halved
  • 1 cup reserved pasta water (from cooking the pasta)

  • 1/4 teaspoon red pepper flakes

  • 1/4 cup sun-dried tomatoes

Instructions

  1. Season and Sear Chicken: Season the chicken breasts evenly with salt and black pepper. Heat the olive oil in a skillet over medium-high heat, then add the chicken breasts. Sear them for 6-7 minutes on each side until they develop a golden brown crust and are cooked through. Remove the chicken from the skillet and let it rest before slicing to retain the juices.
  2. Cook Pasta: Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente, approximately 8-10 minutes. Before draining, reserve 1 cup of the pasta cooking water for use in the sauce.
  3. Sauté Vegetables and Garlic: Using the same skillet from the chicken, reduce heat to medium and add minced garlic. Sauté for about 30 seconds until fragrant. Add halved cherry tomatoes and cook for 2-3 minutes until they begin to soften. Stir in fresh spinach and cook until wilted.
  4. Combine Pasta and Sauce: Reduce the heat to low, then add the cooked fettuccine to the skillet along with the Boursin cheese. Pour in a splash of the reserved pasta water to loosen the sauce. Toss everything gently until the cheese melts completely and coats the pasta evenly. Add more reserved pasta water if needed to adjust the sauce consistency.
