Chicken:
- 4 boneless, skinless chicken breasts
Sauce:
- 2 tablespoons olive oil
- 1 tablespoon unsalted butter
- 8 ounces mushrooms (sliced)
- 2 cloves garlic (minced)
- 1 small onion (diced)
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- Chopped parsley for garnish (optional)
Instructions
- Preheat oven and prepare baking dish: Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- Sear chicken: Season chicken with salt and pepper. Sear in a skillet until golden, then transfer to the baking dish.
