Description

This creamy chicken gnocchi soup with garlic is a comforting and hearty dish perfect for a cozy meal. Tender chicken pieces, pillowy gnocchi, and fresh spinach are simmered together in a rich, flavorful broth enhanced with garlic, onion, and Italian seasoning, then finished with heavy cream for an indulgent texture.

Ingredients

Scale

Chicken and Vegetables

  • 1 lb boneless, skinless chicken breasts, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup spinach, chopped

Liquids

  • 1 tablespoon olive oil
  • 4 cups chicken broth
  • 1 cup heavy cream

Main Carbohydrate

  • 1 package (16 oz) gnocchi

Seasonings

  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the Chicken: Heat olive oil in a large pot over medium heat. Add diced chicken and cook until browned on all sides. Remove chicken and set aside.
  2. Sauté the Onion and Garlic: In the same pot, sauté chopped onion and minced garlic for 3-4 minutes until softened and fragrant.
  3. Add the Broth and Gnocchi: Pour in chicken broth and bring to a boil. Stir in gnocchi and cook according to package instructions (about 3 minutes) until they float and are tender.
  4. Return the Chicken and Add Cream: Add cooked chicken back to the pot. Stir in heavy cream, chopped spinach, Italian seasoning, salt, and pepper. Simmer for another 5 minutes or until the soup thickens slightly and flavors meld.
  5. Serve: Taste and adjust seasonings if needed. Serve the soup hot for a creamy and satisfying meal.

Notes

  • For extra flavor, consider adding a pinch of crushed red pepper flakes for a mild heat.
  • You can substitute spinach with kale or Swiss chard if desired.
  • Using pre-cooked rotisserie chicken can save time.
  • For a lighter version, substitute heavy cream with half-and-half or milk, but the soup will be less creamy.
  • Gnocchi cooks quickly; do not overcook to avoid mushy texture.
