Ingredients
Scale
Chicken and Vegetables
- 1 lb boneless, skinless chicken breasts, diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 cup spinach, chopped
Liquids
- 1 tablespoon olive oil
- 4 cups chicken broth
- 1 cup heavy cream
Main Carbohydrate
- 1 package (16 oz) gnocchi
Seasonings
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Cook the Chicken: Heat olive oil in a large pot over medium heat. Add diced chicken and cook until browned on all sides. Remove chicken and set aside.
- Sauté the Onion and Garlic: In the same pot, sauté chopped onion and minced garlic for 3-4 minutes until softened and fragrant.
- Add the Broth and Gnocchi: Pour in chicken broth and bring to a boil. Stir in gnocchi and cook according to package instructions (about 3 minutes) until they float and are tender.
- Return the Chicken and Add Cream: Add cooked chicken back to the pot. Stir in heavy cream, chopped spinach, Italian seasoning, salt, and pepper. Simmer for another 5 minutes or until the soup thickens slightly and flavors meld.
- Serve: Taste and adjust seasonings if needed. Serve the soup hot for a creamy and satisfying meal.
Notes
- For extra flavor, consider adding a pinch of crushed red pepper flakes for a mild heat.
- You can substitute spinach with kale or Swiss chard if desired.
- Using pre-cooked rotisserie chicken can save time.
- For a lighter version, substitute heavy cream with half-and-half or milk, but the soup will be less creamy.
- Gnocchi cooks quickly; do not overcook to avoid mushy texture.
