Chicken Chili:

  • 1 1/2 pounds boneless skinless chicken breasts
  • 1 small yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 can (4 ounces) diced green chiles

  • 1/2 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt

Additional Ingredients:

  • 2 cans (15 ounces each) Great Northern beans, drained and rinsed
  • 2 cups chicken broth
  • 1 cup frozen corn
  • 4 ounces cream cheese, cubed
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • Juice of 1 lime

Instructions

  1. Prepare the Chicken: Place chicken breasts in the crockpot.
  2. Add Ingredients: Top with onion, garlic, green chiles, cumin, oregano, chili powder, paprika, salt, and pepper. Add beans, corn, and chicken broth.
  3. Cook: Cover and cook on low for 6–8 hours or high for 3–4 hours until chicken is cooked. Shred chicken, return to pot.
  4. Add Creaminess: Stir in cream cheese, sour cream, and heavy cream until melted.
  5. Finish: Heat for 10–15 minutes. Stir in lime juice before serving.
