- 1 onion, chopped
- 1 bell pepper (red or yellow), chopped
- 2 cloves garlic, minced
- 1 teaspoon ground allspice
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon dried thyme
- 1/4 teaspoon ground cayenne pepper (optional, for spice)
- Salt and pepper to taste
- 1 cup coconut milk
- 1/2 cup heavy cream
- 1/4 cup chicken broth (or vegetable broth)
- 1/4 cup grated Parmesan cheese
- 1 tablespoon fresh lime juice
- 2 tablespoons fresh cilantro, chopped (for garnish)
Instructions
- Cook the pasta: According to the package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
- Sauté the vegetables: In a large skillet, heat the olive oil and butter. Add onion, bell pepper, and cook until softened.
- Add seasonings: Garlic, allspice, paprika, thyme, cayenne, salt, and pepper. Cook until fragrant.
- Cook the shrimp: Add shrimp to the skillet and cook until pink. Remove and set aside.
- Make the sauce: In the same skillet, combine coconut milk, cream, and broth. Simmer until slightly thickened.
- Finish the sauce: Stir in Parmesan and lime juice until smooth.
- Combine: Add pasta to the skillet, toss in the sauce. Add shrimp back in.
- Serve: Garnish with cilantro and serve hot.
