- 3 cloves garlic (minced)
- 1/2 cup low-sodium chicken broth
- 1/2 cup light cream or half-and-half
- 1/4 cup freshly squeezed lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon Dijon mustard
- 1/4 teaspoon crushed red pepper flakes (optional)
- 2 tablespoons grated Parmesan cheese
- 1 tablespoon fresh parsley (chopped, for garnish)
Instructions
- Season the chicken: Season the chicken breasts with salt and pepper.
- Cook the chicken: In a large skillet, heat olive oil over medium-high heat. Add the chicken and sear for 4–5 minutes per side until cooked through. Remove and set aside.
- Prepare the sauce: In the same skillet, sauté garlic. Stir in chicken broth, cream, lemon juice, zest, mustard, and red pepper flakes. Simmer until slightly thickened. Stir in Parmesan until smooth.
- Combine and simmer: Return chicken to the skillet, spoon sauce over the top, and simmer to reheat. Garnish with parsley before serving.
