  • 4 boneless, skinless chicken breasts
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Sauce:

  • 3 cloves garlic (minced)
  • 1/2 cup low-sodium chicken broth
  • 1/2 cup light cream or half-and-half
  • 1/4 cup freshly squeezed lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon fresh parsley (chopped, for garnish)

Instructions

  1. Season the chicken: Season the chicken breasts with salt and pepper.
  2. Cook the chicken: In a large skillet, heat olive oil over medium-high heat. Add the chicken and sear for 4–5 minutes per side until cooked through. Remove and set aside.
  3. Prepare the sauce: In the same skillet, sauté garlic. Stir in chicken broth, cream, lemon juice, zest, mustard, and red pepper flakes. Simmer until slightly thickened. Stir in Parmesan until smooth.
