Description

This Creamy Peanut Noodles recipe features tender spaghetti tossed in a rich, flavorful peanut sauce made with sesame oil, garlic, ginger, soy sauce, and a touch of sriracha for a spicy kick. Garnished with crunchy chopped peanuts and fresh scallions, it’s a quick and delightful meal perfect for any night of the week.

Ingredients

Scale

Pasta

  • 8 ounces dry spaghetti

Sauce

  • 2 tablespoons sesame oil
  • 1 clove garlic, minced
  • 1 teaspoon minced fresh ginger
  • ¼ cup creamy peanut butter
  • ¼ cup low-sodium soy sauce
  • ¼ cup hot water
  • 1 tablespoon rice vinegar
  • 2 teaspoons sriracha
  • 2 teaspoons brown sugar
  • 2 scallions, diced, green and white parts separated

Additional

  • ½ small carrot, peeled and sliced into julienne/matchsticks
  • Chopped peanuts, for garnish

Instructions

  1. Cook Pasta: Cook pasta in a large pot of salted boiling water until al dente, according to the package directions. Reserve â…“ cup of the pasta water before draining the noodles.
  2. Make Sauce: Heat a small nonstick skillet over medium-low heat. Add the sesame oil and most of the white parts of the scallions, reserving some whites for garnish. Sauté until the scallions are tender. Add the minced ginger and garlic and cook until fragrant, about 20 seconds. Remove from heat and stir in the creamy peanut butter, low-sodium soy sauce, hot water, rice vinegar, sriracha, brown sugar, and scallion greens until the sauce is smooth and combined.
  3. Combine and Serve: Toss the cooked spaghetti with the sliced carrot and the peanut sauce. Add reserved pasta water a little at a time if the sauce needs loosening to coat the noodles evenly. Serve immediately, garnished with chopped peanuts and the reserved scallion whites for extra crunch and flavor.

Notes

  • Reserve pasta water to adjust sauce consistency as needed.
  • For extra protein, consider adding grilled chicken or tofu.
  • Sriracha amount can be adjusted to taste for spiciness.
  • Use low-sodium soy sauce to control sodium levels.
  • This dish is best served fresh but can be refrigerated and reheated gently.
