  • 1 lb boneless, skinless chicken breasts or thighs
  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 (4 oz) can diced green chiles
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • 2 (15 oz) cans white beans, drained and rinsed
  • 1 1/2 cups frozen or canned corn
  • 3 cups low-sodium chicken broth
  • 4 oz cream cheese, softened and cubed
  • 1/2 cup sour cream
  • 1/2 cup heavy cream or milk
  • Juice of 1 lime
  • Chopped cilantro and shredded Monterey Jack cheese for topping (optional)

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add the diced onion and cook for 3–4 minutes until softened.
  2. Stir in garlic and cook for 30 seconds until fragrant.
  3. Add the green chiles, cumin, oregano, chili powder, paprika, salt, and pepper. Stir well to combine.
  4. Place the chicken breasts in the pot and pour in the chicken broth. Bring to a boil, then reduce heat and simmer uncovered for 15–20 minutes or until the chicken is cooked through and tender.
  5. Remove the chicken, shred it with two forks, and return it to the pot.
  6. Add the white beans and corn, then stir in the cream cheese until melted and fully incorporated.
  7. Reduce heat to low, then stir in the sour cream and heavy cream.
  8. Let the chili warm through for another 5–7 minutes, stirring occasionally.
  9. Finish with a squeeze of lime juice. Serve hot with desired toppings.

Notes

  • To save time, use pre-cooked rotisserie chicken and add it after the broth simmers.
  • For extra heat, add diced jalapeño or a pinch of cayenne.
