Chicken:
- 1 1/2 lbs boneless, skinless chicken thighs or breasts, cut into cutlets
- 1 cup buttermilk

- 1/2 tsp paprika
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
Coating:
- 1 1/2 cups all-purpose flour
- 1/2 cup cornstarch
- 2 eggs, beaten
- vegetable oil for frying

Instructions
- Marinate the Chicken: In a bowl, combine the chicken, buttermilk, salt, pepper, paprika, garlic powder, and onion powder. Marinate in the refrigerator for at least 1 hour or overnight.
- Prepare the Coating: Mix flour and cornstarch in a shallow dish. Beat the eggs in a separate bowl.
- Coat the Chicken: Dredge chicken in flour mixture, dip in egg, then coat again in flour for extra crispiness.
- Fry the Chicken: Heat oil to 350°F. Fry chicken in batches for 5–7 minutes per side until golden brown.
- Serve: Drain on a wire rack and serve hot with sides.
