  • 1 tablespoon tomato paste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • 2 tablespoons water

For Serving:

  • ½ cup BBQ sauce
  • olive oil spray

Instructions

  1. Preheat the oven: Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Prepare the mixture: In a food processor, pulse the chickpeas, oats, olive oil, tomato paste, nutritional yeast, garlic powder, onion powder, smoked paprika, salt, and water until a thick, slightly chunky mixture forms.
  3. Shape the nuggets: Transfer the mixture to a bowl and stir in the breadcrumbs. Scoop out tablespoon-sized portions and shape into nugget-sized pieces.
  4. Bake: Place the nuggets on the baking sheet, lightly spray with olive oil, and bake for 20 to 25 minutes, flipping halfway through, until golden and crispy.
