Ingredients

For the Hot Honey:

1/3 cup honey; 1 ½ teaspoons hot sauce (such as Frank’s or Cholula); ¾ teaspoon chili flakes;

For the Chicken:

2 chicken breasts (sliced horizontally to make 4 thinner pieces); 2 teaspoons paprika; 1 teaspoon salt; ½ teaspoon each onion powder, garlic powder, dried oregano, black pepper; ¼ teaspoon cayenne pepper; ¼ cup plain flour; 2 eggs (beaten); 1 cup (65 g) Panko breadcrumbs; vegetable oil (enough to coat the pan, about 6–8 tbsp); 7 oz (200 g) crumbled feta cheese


Instructions

  1. Mix Hot Honey: Combine the honey, hot sauce, and chili flakes in a small bowl and warm gently. Allow to cool.
  2. Prepare Chicken: Slice the chicken breasts horizontally. Create three dredging stations: seasoned flour, beaten eggs, seasoned Panko breadcrumbs. Dredge each chicken piece in flour, egg, then breadcrumbs.
  3. Fry Chicken: Heat oil in a pan and fry chicken until golden and crispy on both sides. Transfer to a wire rack.
  4. Top with Feta: Sprinkle crumbled feta over the chicken. Broil until the feta is golden and creamy.
  5. Drizzle with Hot Honey: Drizzle the cooled hot honey over the chicken. Serve hot.

Notes

  • You can bake the chicken for a lighter option: spray breadcrumbs with oil and lightly toast at 180 °C (350 °F) for 5 minutes, then bake the coated chicken at 220 °C (430 °F) for 10 minutes, flip, spray again and bake another 8–10 minutes. Finish under the grill for the feta.
  • Adjust heat by varying chili flakes or hot sauce, make the hot honey ahead and refrigerate tightly sealed.
  • Serve with arugula (rocket), potato wedges, or your favorite sides.
