Description

Pita:

  • 4 pita breads
  • 2 tablespoons olive oil

Chicken & Feta Mixture:

  • 2 cups cooked chicken breast, shredded or chopped
  • 1 cup crumbled feta cheese
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/4 cup kalamata olives, sliced
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste

Optional Garnishes and Serving:

  • Fresh parsley or dill for garnish
  • Tzatziki or hummus for serving

Instructions

  1. Preheat the oven: Preheat the oven to 400°F.
  2. Bake the pita: Brush both sides of the pita breads lightly with olive oil and bake for 5–7 minutes until golden and crisp.
  3. Prepare the chicken & feta mixture: In a bowl, combine the cooked chicken, cherry tomatoes, red onion, olives, feta, oregano, salt, and pepper.
  4. Top the pita: Once the pita is crisp, top each with the chicken and feta mixture.
  5. Warm through: Return the topped pitas to the oven for 3–5 minutes until warmed through and feta starts to soften.
  6. Garnish and serve: Garnish with fresh herbs if desired and serve warm with tzatziki or hummus on the side.
