Pita:
- 4 pita breads
- 2 tablespoons olive oil
Chicken & Feta Mixture:
- 2 cups cooked chicken breast, shredded or chopped
- 1 cup crumbled feta cheese
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/4 cup kalamata olives, sliced
- 1 teaspoon dried oregano
- Salt and black pepper to taste
Optional Garnishes and Serving:
- Fresh parsley or dill for garnish
- Tzatziki or hummus for serving
Instructions
- Preheat the oven: Preheat the oven to 400°F.
- Bake the pita: Brush both sides of the pita breads lightly with olive oil and bake for 5–7 minutes until golden and crisp.
- Prepare the chicken & feta mixture: In a bowl, combine the cooked chicken, cherry tomatoes, red onion, olives, feta, oregano, salt, and pepper.
- Top the pita: Once the pita is crisp, top each with the chicken and feta mixture.
- Warm through: Return the topped pitas to the oven for 3–5 minutes until warmed through and feta starts to soften.
- Garnish and serve: Garnish with fresh herbs if desired and serve warm with tzatziki or hummus on the side.
