Description

This Crock Pot Beef and Broccoli recipe delivers tender, flavorful beef and perfectly cooked broccoli in a savory sauce, all made effortlessly in a slow cooker. A delicious and easy meal that pairs perfectly with steamed white rice for a comforting and satisfying dinner.

Ingredients

Scale

Beef and Sauce

  • 2 pounds sirloin steak or boneless beef chuck roast, sliced thin
  • 1 cup beef broth
  • 1/2 cup low sodium soy sauce
  • 1/4 cup brown sugar
  • 1 Tablespoon sesame oil
  • 3 garlic cloves, minced

Thickening Mixture

  • 4 Tablespoons cornstarch
  • 4 Tablespoons water

Vegetables and Serving

  • 1 bag (12 ounces) frozen broccoli florets
  • Cooked white rice (optional, for serving)

Instructions

  1. Prepare the sauce: In the insert of a 6-quart crock pot (slow cooker), whisk together beef broth, low sodium soy sauce, brown sugar, sesame oil, and minced garlic until well combined.
  2. Add and marinate beef: Place thinly sliced beef into the sauce mixture inside the crock pot. Toss the beef gently to make sure it’s evenly coated with the sauce. Cover with the lid.
  3. Slow cook the beef: Cook on low heat for 5 hours, allowing the beef to become tender and infused with the flavors of the sauce.
  4. Make the slurry and thicken the sauce: In a small bowl, whisk together cornstarch and water until smooth. Pour the mixture into the crock pot and stir well to combine. This will help thicken the sauce.
  5. Add broccoli and finish cooking: Add the frozen broccoli florets on top of the beef and sauce. Gently stir to mix the broccoli into the sauce, then cover and cook for an additional 30 minutes on low to cook the broccoli and thicken the sauce further.
  6. Serve: Spoon the beef and broccoli mixture over warm white rice if desired. Enjoy a comforting and yummy slow cooker meal!

Notes

  • Use low sodium soy sauce to control the salt level in the dish.
  • Slicing the beef thinly ensures it cooks evenly and becomes tender.
  • Frozen broccoli saves time and cooks perfectly in the slow cooker.
  • The cornstarch slurry is essential to thicken the sauce after slow cooking.
  • Serve immediately after cooking for best texture, especially for broccoli.
  • Leftovers can be stored in the fridge for up to 3 days and reheated gently.
