  • 1/2 cup sun-dried tomatoes (drained and chopped)
  • 3 cloves garlic (minced)
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons unsalted butter
  • 2 tablespoons cornstarch + 2 tablespoons water (optional for thickening)
  • fresh basil or parsley for garnish

Instructions

  1. Place the chicken breasts: In the bottom of your crock pot.
  2. In a medium bowl, whisk together the heavy cream, chicken broth, Parmesan cheese, garlic, Italian seasoning, red pepper flakes (if using), salt, and black pepper. Pour the mixture over the chicken. Top with chopped sun-dried tomatoes and butter.

  3. Cook: Cover and cook on low for 4–5 hours or on high for 2–3 hours, until the chicken is fully cooked and tender.
  4. For a thicker sauce, whisk together cornstarch and water, then stir into the slow cooker during the last 20–30 minutes of cooking.

  5. Serve: Over pasta, mashed potatoes, or rice. Garnish with chopped fresh basil or parsley before serving.
