Chicken:

Sauce:
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 cup sun-dried tomatoes (chopped, packed in oil and drained)
- 3 cloves garlic (minced)
- 1 teaspoon Italian seasoning
- 1/2 teaspoon crushed red pepper flakes (optional)
- Salt and black pepper to taste
Thickening:
- 2 tablespoons cornstarch + 2 tablespoons water
Garnish:
- Fresh basil or parsley for garnish (optional)
Instructions
- Season the chicken: Season the chicken breasts with salt, pepper, and Italian seasoning. Place them in the bottom of a lightly greased crock pot.
- Prepare the sauce: In a medium bowl, whisk together chicken broth, heavy cream, Parmesan cheese, sun-dried tomatoes, minced garlic, and crushed red pepper flakes. Pour the sauce over the chicken in the crock pot.
- Cook: Cover and cook on LOW for 4–5 hours or on HIGH for 2.5–3 hours, until the chicken is tender and fully cooked.
- Thicken the sauce: If you’d like a thicker sauce, mix the cornstarch and water in a small bowl, then stir into the sauce during the last 20–30 minutes of cooking.
- Serve: Before serving, garnish with chopped fresh basil or parsley if desired. Serve over pasta, mashed potatoes, or rice.
