Chicken:

Sauce:

  • 3 cloves garlic (minced)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • Salt and black pepper to taste

Thickening:

  • 2 tablespoons cornstarch + 2 tablespoons water

Garnish:

  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Season the chicken: Season the chicken breasts with salt, pepper, and Italian seasoning. Place them in the bottom of a lightly greased crock pot.
  2. Prepare the sauce: In a medium bowl, whisk together chicken broth, heavy cream, Parmesan cheese, sun-dried tomatoes, minced garlic, and crushed red pepper flakes. Pour the sauce over the chicken in the crock pot.
  3. Cook: Cover and cook on LOW for 4–5 hours or on HIGH for 2.5–3 hours, until the chicken is tender and fully cooked.
  4. Thicken the sauce: If you’d like a thicker sauce, mix the cornstarch and water in a small bowl, then stir into the sauce during the last 20–30 minutes of cooking.
  5. Serve: Before serving, garnish with chopped fresh basil or parsley if desired. Serve over pasta, mashed potatoes, or rice.
