- 2 pounds frozen diced hash brown potatoes, thawed
- 1 (10.5-ounce) can condensed cream of chicken soup
- 1 cup sour cream
- 1 ½ cups shredded sharp cheddar cheese, divided
- ½ cup unsalted butter, melted
- ½ cup finely chopped onion
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper

Instructions
- Prepare the Slow Cooker: Spray the inside of your slow cooker with nonstick cooking spray.
- Mix Ingredients: In a large mixing bowl, combine the thawed potatoes, cream of chicken soup, sour cream, 1 ½ cups cheddar cheese, melted butter, onion, garlic powder, salt, and pepper. Stir until well mixed.
- Cook in Slow Cooker: Transfer the mixture into the slow cooker and spread evenly. Cover and cook on low for 5 to 6 hours or on high for 3 to 4 hours, until potatoes are tender and mixture is bubbly.
- Final Touches: During the last 15 minutes of cooking, sprinkle the remaining ½ cup of cheddar cheese on top and cover until melted. Garnish with fresh parsley before serving.
