For the Chili:
- 1 1/2 pounds ground beef
- 1 medium yellow onion (diced)
- 3 cloves garlic (minced)
- 1 (15 oz) can kidney beans (drained and rinsed)
- 1 (15 oz) can black beans (drained and rinsed)
- 1 (15 oz) can diced tomatoes (with juice)
- 1 (8 oz) can tomato sauce
- 2 tablespoons tomato paste
- 1 cup beef broth
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- 1/4 teaspoon cayenne pepper (optional)
- Salt and pepper to taste
Instructions
- Brown the Beef: In a large skillet, cook the ground beef until fully browned. Drain excess fat.
- Sauté Onion and Garlic: Add diced onion and minced garlic to the skillet. Sauté until softened.
- Combine Ingredients: Transfer the beef mixture to the crockpot. Add beans, tomatoes, tomato sauce, paste, and broth. Season with spices.
- Cook: Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Adjust Seasoning: Taste and adjust salt and pepper as needed. Serve with desired toppings.
