Roasted Chickpeas:
- 1 can (15 oz) chickpeas (drained, rinsed, and patted dry)
- 1 tbsp olive oil
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- 1/4 tsp salt
- 1/4 tsp black pepper
Wraps:
- 4 large whole wheat tortillas
- 2 cups chopped romaine lettuce
- 1/2 cup grated Parmesan cheese
- 1/3 cup Caesar dressing (store-bought or homemade)
- 1/2 cup diced cucumber (optional)

Instructions
- Preheat the oven: Preheat the oven to 400°F.
- Roast Chickpeas: Spread chickpeas on a baking sheet, toss with olive oil, garlic powder, smoked paprika, salt, and pepper. Roast for 25–30 minutes until crispy.
- Prepare Wraps: Warm tortillas, toss romaine with Caesar dressing. Layer lettuce, chickpeas, Parmesan, and cucumber on each tortilla. Roll tightly and slice in half.
- Serve: Serve wraps with lemon wedges.
Notes
- For a vegan version, use dairy-free Caesar dressing and vegan Parmesan.
