Roasted Chickpeas:

  • 1 can (15 oz) chickpeas (drained, rinsed, and patted dry)
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Wraps:

  • 4 large whole wheat tortillas
  • 2 cups chopped romaine lettuce
  • 1/2 cup grated Parmesan cheese
  • 1/3 cup Caesar dressing (store-bought or homemade)
  • 1/2 cup diced cucumber (optional)
  • lemon wedges for serving

Instructions

  1. Preheat the oven: Preheat the oven to 400°F.
  2. Roast Chickpeas: Spread chickpeas on a baking sheet, toss with olive oil, garlic powder, smoked paprika, salt, and pepper. Roast for 25–30 minutes until crispy.
  3. Prepare Wraps: Warm tortillas, toss romaine with Caesar dressing. Layer lettuce, chickpeas, Parmesan, and cucumber on each tortilla. Roll tightly and slice in half.
  4. Serve: Serve wraps with lemon wedges.
