- 4 cups fresh dandelion flower heads (yellow petals only, no green parts)
- 4 cups water
- 1 lemon, thinly sliced
- 1 vanilla bean or 1 teaspoon vanilla extract (optional)
- 4 cups granulated sugar
Instructions
- Rinse Dandelion Flowers: Thoroughly clean dandelion flowers, removing green parts to avoid bitterness.
- Prepare Mixture: Combine petals, water, and lemon in a saucepan. Bring to a boil, then simmer for 20 minutes.
- Steep the Mixture: Remove from heat, cover, and let steep for 12 to 24 hours for enhanced flavor.
- Strain: Strain the liquid through a sieve, pressing gently to extract liquid.
- Add Sugar: Return liquid to pot, add sugar and vanilla if desired. Boil, then simmer until thickened.
- Store: Pour into jars, seal, and cool. Store in a cool, dark place or refrigerate.
