Description

These Decadent Chewy Fruitcake Cookies are a delightful twist on traditional fruitcake flavors, packed with candied fruit, nuts, and warm spices. Perfect for holiday baking or a sweet treat any time of year!

Ingredients

Scale

For the cookies:

  • 1/2 cup unsalted butter (softened)
  • 1/2 cup brown sugar (packed)
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon molasses
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup chopped candied mixed fruit
  • 1/2 cup chopped pecans or walnuts
  • 1/4 cup chopped dried cherries or cranberries
  • 1/4 cup golden raisins

Instructions

  1. Preheat the oven and prepare the baking sheet: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the butter and sugars: In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add wet ingredients: Beat in the egg, vanilla, and molasses until smooth.
  4. Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
  5. Mix the dough: Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Fold in the candied fruit, nuts, dried cherries, and raisins.
  6. Bake the cookies: Drop rounded tablespoons of dough onto the prepared baking sheet and bake for 10–12 minutes until golden. Let cool before transferring to a wire rack.

Notes

  • These cookies get chewier after a day—store them in an airtight container to maintain texture.
  • You can soak the dried fruit in a little orange juice or rum beforehand for extra flavor.
  • Great for holiday cookie platters!
