Egg White Bites:
- 2 cups liquid egg whites (or whites from about 12 eggs)
- 1/2 cup cottage cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped red bell pepper
- 1/4 cup chopped spinach
- 1/4 cup chopped cooked turkey bacon or ham (optional)
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and lightly grease a muffin tin or use silicone liners.
- Blend egg whites and cottage cheese: In a blender, combine the egg whites and cottage cheese. Blend until smooth and frothy.
- Prepare the mixture: Pour the blended mixture into a large bowl and stir in Parmesan, bell pepper, spinach, meat (if using), salt, pepper, and garlic powder.
- Fill the muffin cups: Divide the mixture evenly among 12 muffin cups, filling each about 3/4 full.
- Bake: Bake for 20–25 minutes, or until the centers are set and slightly puffed.
- Cool and serve: Let cool for 5 minutes before removing from the pan. Serve warm or store in the fridge for up to 5 days.
