For the Casserole:
- 3 cups cooked shredded chicken
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup frozen corn
- 1 can (10 oz) diced tomatoes with green chilies
- 1 cup cooked white rice
- 1 packet (1 oz) taco seasoning
- 1 cup sour cream
- 2 cups shredded Mexican blend cheese
For Assembly:
- 8 small flour tortillas
- Fresh cilantro, chopped for garnish
Instructions
- Preheat Oven: Preheat the oven to 350°F and lightly grease a 9×13-inch baking dish.
- Prepare Filling: In a large bowl, mix together the chicken, black beans, corn, diced tomatoes with green chilies, rice, taco seasoning, sour cream, and 1 cup of cheese until well combined.
- Assemble Layers: Cut the tortillas into strips and layer half of them in the bottom of the baking dish. Spread half of the chicken mixture over the tortillas. Repeat with the remaining tortillas and chicken mixture.
- Final Touches: Top the casserole with the remaining cheese. Cover with foil and bake for 20 minutes, then remove the foil and bake for an additional 10 minutes until the cheese is melted and bubbly.
- Serve: Garnish with chopped cilantro before serving.

- You can use leftover rotisserie chicken for convenience.
