Description

For the Beef Mixture:

  • 1 pound ground beef
  • 1/2 medium onion, diced
  • 1 (15 oz) can corn, drained
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (10 oz) can diced tomatoes with green chilies (like Rotel)
  • 1 tablespoon taco seasoning
  • 1 cup shredded cheddar cheese

For the Cornbread Topping:

  • 1 box (8.5 oz) Jiffy corn muffin mix
  • 1 large egg
  • 1/3 cup milk

Instructions

  1. Preheat the oven to 375°F and lightly grease a 9×9-inch baking dish.
  2. In a skillet, cook the ground beef and onion until browned. Drain excess grease, then add corn, black beans, tomatoes, and taco seasoning. Simmer for 5 minutes.

  3. Spread the beef mixture in the prepared dish and top with cheddar cheese.
  4. In a bowl, mix the cornbread mix, egg, and milk. Pour over the beef layer.
  5. Bake for 25–30 minutes until golden. Let cool before serving.

Notes

  • You can use ground turkey or sausage instead of beef.
