For the Beef Mixture:
- 1 pound ground beef
- 1/2 medium onion, diced
- 1 (15 oz) can corn, drained
- 1 (15 oz) can black beans, rinsed and drained
- 1 (10 oz) can diced tomatoes with green chilies (like Rotel)
- 1 tablespoon taco seasoning
- 1 cup shredded cheddar cheese
For the Cornbread Topping:
- 1 box (8.5 oz) Jiffy corn muffin mix
- 1 large egg
- 1/3 cup milk
Instructions
- Preheat the oven to 375°F and lightly grease a 9×9-inch baking dish.
- Spread the beef mixture in the prepared dish and top with cheddar cheese.
- In a bowl, mix the cornbread mix, egg, and milk. Pour over the beef layer.
- Bake for 25–30 minutes until golden. Let cool before serving.
In a skillet, cook the ground beef and onion until browned. Drain excess grease, then add corn, black beans, tomatoes, and taco seasoning. Simmer for 5 minutes.
Notes
- You can use ground turkey or sausage instead of beef.
- For extra heat, add jalapeños or green chilies.
- Serve with sour cream, salsa, or chopped cilantro.
