  • 2 tablespoons Cajun seasoning, divided
  • 2 tablespoons olive oil
  • Vegetables:

  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 3 cloves garlic, minced
  • Pasta and Sauce:

  • 12 oz fettuccine or penne pasta
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon black pepper
  • Chopped parsley for garnish

Instructions

  1. Cook the Pasta: Cook pasta according to package directions until al dente. Drain and set aside.
  2. Sear the Chicken: Season chicken with 1 tablespoon Cajun seasoning. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5 to 6 minutes until browned and cooked through. Remove chicken and set aside.
  3. Sauté Vegetables and Make Sauce: In the same skillet, sauté bell peppers for 3 minutes until slightly softened, then add garlic and cook for 30 seconds. Stir in heavy cream, chicken broth, Parmesan cheese, remaining Cajun seasoning, and black pepper. Simmer for 3 to 4 minutes until sauce slightly thickens.
  4. Combine and Serve: Add chicken and pasta to the skillet, tossing to coat evenly in the sauce. Cook for 1 to 2 minutes until heated through. Garnish with parsley before serving.
