Cookies:
- 2 1/2 cups all-purpose flour
- 3/4 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup unsalted butter (softened)
- 3/4 cup granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 1 tablespoon milk
Icing:
- 1 1/2 cups powdered sugar
- 2–3 tablespoons milk
- 1/2 teaspoon vanilla extract
- food coloring and sprinkles (optional)
Instructions
- Prepare the Cookie Dough: In a medium bowl, whisk together the flour, baking powder, and salt. In a large bowl, cream the butter and sugar until light and fluffy. Beat in the egg, vanilla extract, and milk until well combined. Gradually add the dry ingredients and mix until a soft dough forms.
- Chill the Dough: Divide the dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.
- Bake the Cookies: Preheat the oven to 350°F and line baking sheets with parchment paper. Roll out one dough disc to about 1/4-inch thickness. Cut into shapes with cookie cutters and transfer to prepared baking sheets. Bake for 8–10 minutes, or until edges are just lightly golden.
- Ice the Cookies: For the icing, whisk powdered sugar, milk, and vanilla until smooth. Adjust thickness by adding more milk or powdered sugar as needed. Add food coloring if desired, and decorate cooled cookies. Allow icing to set before storing.
