- 2/3 cup freshly squeezed lemon juice
- 2 teaspoons lemon zest
- Powdered sugar for dusting
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking pan or line with parchment paper.
- Prepare the crust: Cream together softened butter and 1/2 cup sugar. Mix in 2 cups of flour and salt to form a dough. Press into the prepared pan and bake for 15-20 minutes.
- Make the filling: Whisk together eggs, 1 1/2 cups sugar, 1/4 cup flour, lemon juice, and zest until smooth.
- Add filling: Pour the lemon mixture over the hot crust and bake for an additional 20-25 minutes.
- Cool and serve: Let the squares cool in the pan, dust with powdered sugar, cut into squares, and serve.
