Mackerel:

  • 4 whole mackerel (cleaned and gutted)

Seasoning:

  • 3 tablespoons olive oil
  • 1 lemon (sliced into rounds)
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 4 garlic cloves (minced)
  • 1 small red onion (sliced)
  • 1 cup cherry tomatoes (halved)
  • 2 tablespoons fresh parsley (chopped)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Preheat the Oven: Preheat oven to 400°F.
  2. Prepare the Mackerel: Rinse the mackerel and pat dry. Make diagonal slashes on each side.
