Mackerel:
- 4 whole mackerel (cleaned and gutted)
Seasoning:

- 1 lemon (sliced into rounds)
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin

- 4 garlic cloves (minced)
- 1 small red onion (sliced)
- 1 cup cherry tomatoes (halved)
- 2 tablespoons fresh parsley (chopped)

Instructions
- Preheat the Oven: Preheat oven to 400°F.
- Prepare the Mackerel: Rinse the mackerel and pat dry. Make diagonal slashes on each side.
