Ground Beef Mixture:

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced

Rice and Seasonings:

  • 1 cup long grain white rice (uncooked)
  • 1 (14.5-ounce) can diced tomatoes
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 cup frozen corn
  • 1 (8-ounce) can tomato sauce
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon paprika
  • 1 teaspoon salt

Liquid and Cheese:

  • 2 cups beef or chicken broth
  • 1½ cups shredded cheddar cheese
  • Chopped cilantro and lime wedges for garnish (optional)

Instructions

  1. Brown the Beef: In a large skillet, cook ground beef and onion until beef is browned and onion is soft. Drain excess grease if needed. Add garlic and cook for 1 minute.
  2. Add Rice and Ingredients: Stir in rice, tomatoes, beans, corn, tomato sauce, spices, and salt. Pour in broth, bring to a boil, then simmer covered for 18-20 minutes.
  3. Finish and Serve: Remove from heat, stir in 1 cup cheese. Sprinkle remaining cheese on top, cover, and let sit for 5 minutes. Garnish with cilantro and lime wedges.

Notes
