Ground Beef Mixture:
- 1 pound ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
Rice and Seasonings:
- 1 cup long grain white rice (uncooked)
- 1 (14.5-ounce) can diced tomatoes
- 1 (15-ounce) can black beans, drained and rinsed
- 1 cup frozen corn
- 1 (8-ounce) can tomato sauce
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- ½ teaspoon paprika
- 1 teaspoon salt
Liquid and Cheese:
- 2 cups beef or chicken broth
- 1½ cups shredded cheddar cheese
- Chopped cilantro and lime wedges for garnish (optional)
Instructions
- Brown the Beef: In a large skillet, cook ground beef and onion until beef is browned and onion is soft. Drain excess grease if needed. Add garlic and cook for 1 minute.
- Add Rice and Ingredients: Stir in rice, tomatoes, beans, corn, tomato sauce, spices, and salt. Pour in broth, bring to a boil, then simmer covered for 18-20 minutes.
- Finish and Serve: Remove from heat, stir in 1 cup cheese. Sprinkle remaining cheese on top, cover, and let sit for 5 minutes. Garnish with cilantro and lime wedges.
Notes
- You can substitute ground turkey or shredded rotisserie chicken for the ground beef.
- For a spicier version, add chopped jalapeños or use hot diced tomatoes.
