- 2 packs instant ramen noodles (discard seasoning packets)
- 1/4 cup creamy peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey or maple syrup
- 1 teaspoon sriracha (optional)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground ginger
- 1/2 cup reserved noodle cooking water
Garnish:
- 2 green onions, sliced
- 1 tablespoon sesame seeds for garnish (optional)
Instructions
- Cook the Ramen Noodles: Cook the ramen noodles according to package directions, then drain, reserving 1/2 cup of the cooking water.
- Prepare the Peanut Sauce: In a medium bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey, sriracha (if using), garlic powder, and ground ginger until smooth.
- Combine and Toss: Add the reserved warm noodle water gradually to the peanut sauce, whisking until the sauce is creamy. Toss the cooked noodles with the peanut sauce until evenly coated.
- Finish and Serve: Top with sliced green onions and sprinkle with sesame seeds, if desired. Serve warm.
