Main Sauce:
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- ½ small yellow onion, finely chopped
- 1 cup canned pumpkin puree
- 1 cup heavy cream or full-fat coconut milk
- ½ cup grated Parmesan cheese
- ¼ teaspoon ground nutmeg
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon red pepper flakes (optional)
To Serve:
- 12 ounces pasta of choice
- Reserved pasta water as needed
- Fresh sage or parsley for garnish (optional)
Instructions
- Cook the Pasta: Cook pasta according to package directions in salted water. Reserve ½ cup of pasta water before draining.
- Prepare the Sauce: In a large skillet, heat olive oil and sauté onion until soft. Add garlic, pumpkin, cream, Parmesan, nutmeg, salt, pepper, and red pepper flakes. Simmer for 3–4 minutes.
- Combine and Serve: Toss cooked pasta in the sauce, adding reserved pasta water as needed for consistency. Garnish with sage or parsley and extra Parmesan.

- For a dairy-free version, use coconut milk and omit the Parmesan or replace with a vegan alternative.
