Main Sauce:

  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • ½ small yellow onion, finely chopped
  • 1 cup canned pumpkin puree
  • 1 cup heavy cream or full-fat coconut milk
  • ½ cup grated Parmesan cheese
  • ¼ teaspoon ground nutmeg
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional)

To Serve:

  • 12 ounces pasta of choice
  • Reserved pasta water as needed
  • Fresh sage or parsley for garnish (optional)

Instructions

  1. Cook the Pasta: Cook pasta according to package directions in salted water. Reserve ½ cup of pasta water before draining.
  2. Prepare the Sauce: In a large skillet, heat olive oil and sauté onion until soft. Add garlic, pumpkin, cream, Parmesan, nutmeg, salt, pepper, and red pepper flakes. Simmer for 3–4 minutes.
  3. Combine and Serve: Toss cooked pasta in the sauce, adding reserved pasta water as needed for consistency. Garnish with sage or parsley and extra Parmesan.

  • For a dairy-free version, use coconut milk and omit the Parmesan or replace with a vegan alternative.
