- 1 whole turkey (12–14 pounds), thawed if frozen
- 1/2 cup unsalted butter, softened
- 2 teaspoons salt
- 1 teaspoon black pepper
- 2 teaspoons garlic powder
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon paprika

- 1 onion, quartered
- 1 lemon, halved
- 4 garlic cloves, smashed
- 4 sprigs fresh rosemary
- 4 sprigs fresh thyme
- 2 cups low-sodium chicken broth or turkey stock
Instructions
- Preheat the oven and prep the turkey: Preheat the oven to 325°F (165°C). Remove the neck and giblets from the turkey, pat dry. Place on a rack in a roasting pan.
- Prepare the herb butter rub: Combine softened butter, salt, pepper, garlic powder, thyme, rosemary, and paprika. Rub half under the skin and the rest over the turkey.
- Stuff the turkey: Fill the cavity with onion, lemon, garlic, and herbs. Tuck wings, tie legs, pour broth into the pan.
- Roast the turkey: Roast uncovered for 3 to 3 1/2 hours, basting every 45 minutes. Tent with foil if browning too quickly.
- Rest and carve: Let the turkey rest for 20-30 minutes before carving.
