  • 2 servings dry instant ramen noodle cakes or other noodles of choice (around 140 g total)

  • 10 oz extra firm tofu, veggies, or mushrooms of choice, sliced

Sauce

  • 1 cup water or vegetable broth
  • 5-7 tbsp soy sauce (adjust according to taste)
  • 1.5 tsp dark soy sauce (optional, for color)
  • 2-3 tbsp corn starch
  • 1-3 tbsp sugar, maple syrup, or other liquid sweetener (adjust for sweetness)
  • 2 tbsp rice vinegar, white vinegar, or lemon juice (adjust for sourness)
  • 1/4 tsp ground pepper
  • 1/2 tbsp chili garlic sauce or other hot sauce (optional, for spice)
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced (optional)

Instructions

  1. Mix the Sauce: In a bowl, combine all the sauce ingredients—water or broth, soy sauce, dark soy sauce, corn starch, sweetener, vinegar or lemon juice, ground pepper, chili garlic sauce, sesame oil, and minced garlic—stirring well until fully incorporated. Adjust the seasoning according to your preferred levels of sweetness, saltiness, sourness, or spice. Set aside. For more noodles or veggies, double the sauce quantity.
  2. Cook the Noodles: Bring a small pot of water to a boil over high heat. Add the ramen noodles or your choice of noodles and cook them until they are halfway done, about 2-3 minutes less than the package instructions, which keeps them chewy and ideal for absorbing the sauce later.
  3. Drain the Noodles: Drain the noodles thoroughly using a colander. Optionally, rinse them with cold water to halt the cooking process and to remove any excess starch, preventing them from becoming sticky. Set aside.
  4. Sauté Tofu/Mushrooms/Veggies: While the noodles are cooking, heat a pan over medium-high heat and add a small amount of oil. Sauté your sliced tofu, mushrooms, or vegetables until cooked to your liking and slightly golden around the edges.
  5. Simmer the Sauce: Stir the sauce mixture again to re-incorporate any settled corn starch. Pour the sauce into the pan with the sautéed protein and vegetables. Allow it to simmer over medium heat for 2-3 minutes, stirring frequently to prevent sticking, until the sauce thickens into a glossy coating.
  6. Add Noodles & Coat: Add the drained noodles into the pan with the thickened sauce and vegetables. Toss and stir vigorously to ensure every strand of noodles is fully coated with the rich sauce.
  7. Finish Cooking: Continue cooking the noodles and sauce together over medium-high heat for about 3 minutes, allowing the noodles to absorb some of the sauce flavors and for the sauce to thicken further for maximum taste.
  8. Adjust Seasoning & Serve: Taste the finished dish and adjust seasoning by adding more soy sauce, sweetener, or ground pepper if needed. Serve the ramen hot, garnished generously with chopped scallions and a sprinkle of sesame seeds on top.

  • You can substitute extra firm tofu with your choice of mushrooms or mixed veggies for variety.
  • Adjust the thickness of the sauce by varying the amount of cornstarch used; more cornstarch will yield a thicker sauce.
  • To keep the noodles chewier, do not overcook them initially; they will finish cooking when combined with the sauce.
  • Use dark soy sauce for a richer color but it is optional if unavailable.
