Main Dish:
- 1 pound ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning (or 2 tablespoons homemade)
- 1 can (10 ounces) diced tomatoes with green chilies
- 1 can (15 ounces) tomato sauce
- 3 cups beef broth
- 8 ounces spaghetti, uncooked
- Salt and pepper to taste
Garnish:
- 1 cup shredded cheddar cheese
- 1/4 cup chopped fresh cilantro
Instructions
- Cook the Beef: In a large skillet or Dutch oven, cook ground beef and onion over medium heat until beef is browned and onion is tender, about 5 minutes. Drain excess fat if needed. Stir in garlic and cook for 30 seconds.
- Add Ingredients: Add taco seasoning, diced tomatoes with green chilies, tomato sauce, beef broth, and uncooked spaghetti. Stir to combine, ensuring pasta is submerged in liquid.
- Cook: Bring to a boil, then reduce heat to medium-low. Cover and cook for 12–15 minutes, stirring occasionally, until spaghetti is tender and sauce has thickened.
- Season and Garnish: Season with salt and pepper. Stir in shredded cheddar cheese until melted. Garnish with fresh cilantro before serving.
Notes
- For extra creaminess, add 1/4 cup sour cream or cream cheese at the end.
