Coffee Mixture:
- 1 1/2 cups strong brewed coffee (cooled)
- 1/4 cup coffee liqueur or rum (optional)

- 1 package (about 7–8 ounces) vegan ladyfingers or crisp vegan cookies
- 2 cups chilled full-fat coconut cream (from cans refrigerated overnight)
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 8 ounces vegan cream cheese
- 2 tablespoons cocoa powder (for dusting)
Instructions
- Brew the Coffee Mixture: Brew strong coffee and let it cool. Stir in coffee liqueur or rum if using.
- Prepare the Cream Filling: In a large mixing bowl, whip chilled coconut cream until fluffy. Add powdered sugar, vanilla extract, and vegan cream cheese, then beat until smooth and creamy.
- Assemble the Tiramisu: Quickly dip each vegan ladyfinger or cookie into the cooled coffee mixture, making sure not to soak them too long, and arrange them in a single layer in a dish. Spread half of the cream mixture over the soaked cookies. Add another layer of dipped cookies, then top with the remaining cream mixture.
- Chill and Serve: Cover and refrigerate for at least 4 hours (overnight is best) to allow flavors to develop and texture to set. Before serving, dust the top generously with cocoa powder using a fine sieve. Slice and serve chilled.
Notes
- For a nutty twist, fold in a few tablespoons of almond butter to the cream mixture.
- If you can’t find vegan ladyfingers, use lightly sweetened vegan sponge cake cut into strips.
