Description
This Easy Yogurt Cake is a simple and delicious dessert that comes together quickly with just a few basic ingredients. Moist and tender, this one-bowl cake is perfect for any occasion.
Ingredients
Scale
For the Cake:
- 1 cup plain whole milk yogurt
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 3 large eggs
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- zest of 1 lemon (optional)
Instructions
- Preheat the oven: Preheat the oven to 350°F and grease a 9-inch round cake pan or line it with parchment paper.
- Mix wet ingredients: In a large bowl, whisk together the yogurt, sugar, and oil until smooth. Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract and lemon zest if using.
- Combine dry ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Add the dry ingredients to the wet ingredients and stir until just combined—do not overmix.
- Bake: Pour the batter into the prepared pan and smooth the top. Bake for 35 to 40 minutes, or until a toothpick inserted in the center comes out clean.
- Cool and serve: Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- This cake is delicious plain or topped with powdered sugar, berries, or a glaze.
- Greek yogurt can be used for a denser texture.
- For a citrusy variation, try orange zest instead of lemon.
