- 1 tablespoon sesame oil
- 1 lb ground pork (or ground turkey or chicken)
- 2 garlic cloves, minced
- 1 tablespoon fresh ginger, grated
- 1 small onion, diced
- 1 (14 oz) bag coleslaw mix or shredded cabbage and carrots
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sriracha or chili garlic sauce (optional)
- 2 green onions, sliced
- sesame seeds, for garnish (optional)
Instructions
- Heat sesame oil: Heat sesame oil in a large skillet or wok over medium-high heat.
- Cook pork: Add the ground pork and cook until browned, breaking it up as it cooks, about 5–6 minutes. Drain excess fat if needed.
- Sauté aromatics: Add the garlic, ginger, and diced onion, and sauté for 2–3 minutes until the onion is softened.
- Add vegetables: Stir in the coleslaw mix and cook for 5–7 minutes until the cabbage is wilted and tender.
- Season and finish: Add soy sauce, rice vinegar, and sriracha, stirring well to combine. Cook for an additional 1–2 minutes until heated through. Top with green onions and sesame seeds before serving.
