Tapioca Pudding:
- ½ cup small pearl tapioca
- 2 ½ cups eggnog
- ½ cup whole milk
- ⅓ cup granulated sugar
- ¼ teaspoon salt
For Egg Mixture:
- 2 large eggs, separated
- 1 teaspoon vanilla extract
Garnish:
- Freshly grated nutmeg for garnish (optional)
Instructions
- Prepare Tapioca: In a medium saucepan, combine tapioca, eggnog, milk, sugar, and salt. Let it sit for 30 minutes to soften tapioca pearls.
- Cook Mixture: Cook the tapioca mixture over medium heat until it boils. Reduce heat and simmer for 10-15 minutes until tapioca is translucent.
- Temper Eggs: Whisk egg yolks in a bowl. Gradually add hot tapioca to yolks, then return mixture to saucepan and cook until thickened.
- Finish Pudding: Stir in vanilla. Beat egg whites to soft peaks and fold into pudding. Chill for at least 2 hours.
- Serve: Sprinkle with nutmeg before serving.
Notes
- For richer pudding, use all eggnog with no milk.
- Store leftovers covered in the refrigerator for up to 3 days.
