  • 1 cup crushed tomatoes
  • 2 tablespoons fresh tarragon (chopped)
  • 1 tablespoon balsamic vinegar

Assembly:

  • 4 ounces goat cheese (softened)
  • 4 sandwich rolls or ciabatta buns
  • Optional arugula or baby spinach for layering

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C). Arrange the eggplant slices on a baking sheet, brush both sides with olive oil, and season with salt and pepper. Roast for 20–25 minutes, flipping halfway through, until golden and tender.
