Ingredients

For the Crust:

1 1/2 cups graham cracker crumbs, 1/4 cup granulated sugar, 6 tablespoons unsalted butter (melted)

For the Blueberry Swirl:

1 cup fresh or frozen blueberries, 2 tablespoons granulated sugar, 1 teaspoon lemon juice

For the Filling:

3 (8-ounce) packages cream cheese (softened), 3/4 cup granulated sugar, 3 large eggs, 1 teaspoon vanilla extract, 6 ounces white chocolate (melted and slightly cooled), 1/2 cup sour cream


Instructions

  1. Preheat the Oven: Preheat the oven to 325°F (160°C) and prepare the springform pan.
  2. Prepare the Crust: Mix graham cracker crumbs, sugar, and melted butter. Press into the pan and bake.
  3. Make the Blueberry Swirl: Cook blueberries, sugar, and lemon juice until thickened. Puree and strain if desired. Let cool.
  4. Prepare the Filling: Beat cream cheese and sugar, then add eggs one at a time. Mix in vanilla, melted white chocolate, and sour cream.
  5. Assemble the Cheesecake: Pour filling over crust, add dollops of blueberry mixture, and swirl gently.
  6. Bake: Place the pan in a water bath and bake until set with a slight jiggle in the center.
  7. Cool and Chill: Cool in the oven with the door cracked, then chill in the refrigerator for at least 4 hours before serving.
