Ingredients
English Muffins:
4 split;
Olive Oil or Butter:
1 tbsp;
Eggs:
6 large;
Milk:
1/4 cup;
Salt:
1/4 tsp;
Black Pepper:
1/4 tsp;
Cheddar or Mozzarella Cheese:
1 cup shredded;
Cooked Bacon or Breakfast Sausage:
4 slices crumbled;
Bell Pepper:
1/4 cup diced (optional);
Green Onion:
2 tbsp chopped (optional)
Instructions
- Preheat the Oven: Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Toast English Muffins: Place the English muffin halves cut side up on the sheet and lightly toast in the oven for 5–7 minutes.
- Prepare Scrambled Eggs: Whisk together eggs, milk, salt, and pepper. Cook in a skillet until just set but still soft.
- Assemble Pizzas: Top toasted English muffins with scrambled eggs, cheese, bacon or sausage, bell pepper, and green onion.
- Bake: Return to the oven and bake for 5–7 more minutes until cheese is melted and bubbly. Serve warm.
